Yes. Squid will run fine on such server, or as fine as the hardware
allows.

Note: Squid runs pretty much on anything, even including Windows for
those inclined to use Windows for some reason...

Any version. The latest STABLE recommended. (currently 2.5.STABLE3)

I do not think you can find recent precompiled SPARC versions of Squid
these days, but compiling from source is always recommended so I do
not consider that a problem..
