Squid is a HTTP proxy. It will cache/proxy HTTP requested from emails
(such as linked pictures) but not emails themselves.

If you want to grab emails from lots of servers and re-host them
locally, fetchmail might help you. If you want help or anything on this,
I'll be happy to help. Email me direct though, not the list.
